Absinthe was originally a French elixir distilled from more than 14 herbs. The mystique of this ancient blend has inspired artists and poets. It is the inspiration for chef Meyjitte Boughenout’s Absynthe Restaurant. Try nine varieties of Absinthe at Absynthe, Surfers Paradise.

Meyjitte’s specialty is a tasting or degustation menu of several courses. Degustation means to savour. Each dish delights the senses as the epicurean experience flows through seven courses chosen from land and sea with sweets that can only be described as heavenly.

The gastronomic journey through presentation, aromas, flavours and textures satisfies the appetite while teasing the palate.

Diners may choose the degustation menu with the sommelier’s selection of wines or select from more than 1000 internationally recognised beverages sourced from the world’s best winemakers.
